This softer cheese goes by the name of Crescenza or Stracchino and is made in Lombardy and Piedmont. Pasteurized whole milk, semi-skimmed milk, or a mix of the two milks may be used. Lactobacilli are added and cultured at 37 °C, and rennet is added once the milk has been appropriately cultured. The curd is cut and gently heated after coagulation. After that, the curd is soaked in a brine solution and aged for 5 to 10 days.

The fresh and creamy appearance of Crescenza is much admired when serving mild and delicate soft cheeses. It can be served by itself, with fresh rocket salad and prosciutto, or even with pizza and baked focaccia. Crescenza is a wonderful addition to a cheeseboard as it can be eaten with sweet jams and honey, making the soft and luscious cheese a wonderful contrast to the harder cheeses.

Since it is eaten very young, it comes without a rind and boasts a mild taste from its soft and creamy texture. This fresh cheese is mild and light, which makes it well-known and appreciated for its melt-in-the-mouth nature. It can be properly utilized in many types of food.
