Milano Salami is characterized by a compact, rice-grain paste, a bright red color, a delicate and sweet flavor, and a maturation period of around 2 months. Its processing begins with the mixture that is skillfully minced to a fine grain and seasoned with salt, pepper, and herbs. The maturation phase lasts longer for this type of salami because of its large diameter, however it’s necessary to obtain the optimal compactness between the fatty and lean parts.

SERVING
