It’s a typical Italian product made by curing strips of back fat (from heavy national pigs) and mixing rosemary and other herms and spices. It’s with rind, salted and favoured with seasonings on the surface.

Lardo may be served very thinly sliced as an antipasto or as a cooking ingredient for a variety of delicious recipes.

Organoleptic Characteristic

Colour – White fat interspersed with pink from the lean meat

Scent – Sweet and spicey

Taste – Delicate and sweet with light aromatic notes

Texture – Soft and mellow. It melts on the plate
