About the product

Moncenis blue cheese is produced with pasteurized cow’s milk from two successive milkings. Then is left to ripe for 3-4 days and the second “cagliata” is added so the two masses do not join in a homogeneous way and create, inside the dough, cracks ready to accommodate molds.

It has a strong and intense flavor, and it is usually served with full bodied, aged red wines, hot Italian fruit mustard, red onion preserves, rye bread and polenta (a boiled cornmeal).

This is a pre-order cheese and waiting period to receive it is approximately 2 weeks.
