Burrata fresh cheese is made with an external bag of thin stringy paste similar to that of ‘fiordilatte’ and is filled with cream mixed with milk enzymes and small strings or cuts of mozzarella. When the season permits, they are further wrapped large, green leaves of a plant called ‘vizzo’ whose pungent aroma penetrates the cheese.

It is generally suspected that initially factories producing mozzarella were interested in burrata cheese because it was a way to utilize the “ritagli” (or scraps) of mozzarella after its production. As they years went by, the interest of burrata increased and today, burrata is known as one of Italian queens of fresh cheeses.
Fresh burrata should be served at room temperature. If it’s too cold, the creamy filling becomes solid and it takes away from the full falvour of burrata.
Serving suggestions:
It can be consumed alone, on a salad, pizza, paninio, or with some fresh bread or accompanied with white wines, lagers, red tomato preserve or ‘schiacciata’ flat bread.
