Buffalo mozzarella is produced in Campania.The buffalo milk, collected every morning at 3 am at the buffalo farms, is brought to the Dairy and is discharged into large circular tanks. Here, the milk is heated up to a temperature of 35-45 degrees. Then rennet is added. After about 30 minutes the cheesemaker makes a first break of the curd, making a cross on the surface with a knife. After about three / four hours of maturation, the curd grows into a uniform and elastic mass, which will then be spun with hot water. Boiling water at 100 ° C is poured into the spinners. Their content is then mixed with a stick, leading to the formation of a uniform paste (‘filatura’, ‘spinning’). Then the forms are created and salted.
It could be eaten on its own or with tomatoes or ham.

This is the alter ego of ‘Bitto’ cheese, produced mainly in the autumn, winter and spring months is made exclusively on the alpine pastures. Like Bitto, it was awarded denomination of protected origin (DOP) status in 1995. It can be ripened with excellent results but it is often preferred fresh on its own or as an ingredient of traditional Valtellina recipes.

Asiago cheese, is one of the most loved Italian gastronomic specialties. It has a long story – it was first made in the year 1000 A.D.
Nowadays it is mostly produced in Veneto with whole cow’s milk. The milk is heated to a temperature of 35 ºC, then the rennet is added to it to form the “Cagliata”, this mixture is heated again and then salted and cut. The forms are left to refine for about 20/40 days.
It has a sweet and delicate taste, and it is usually served with white wine and as an appetizer before the main course.

Its production is simple. The milk is then heated to promote coagulation that takes place within 24 hours. Once the coagulation occurs, the curd is removed to a mold without milling. The molds sit for a period of 24 hours for the whey to drain out completely. The cheese is then salted and turned several times and then allowed to age depending on product desired.
It has a mellow goat flavor and a hint of spice in the finish.
