Hand picking and cold crushing the olives are still carried out according to the ancient processing techniques guaranteeing a high quality product. The oil is green with some golden glints. Its smell is that of fresh vegetables, almonds, fresh flowers and fruit. The taste is fruity, delicate and harmonious. These characteristics are excellent to be combined with the flavour and taste of white and black truffles.
