Famous for its delicate taste, Coppa or Capicolo, is a dry-cured meat product obtained from the muscle running from the neck to the rib of pork raised exclusively on Italian farms. The meat is processed and flavored with ingredients like salt, pepper, garlic and white wine before being stuffed into the casing, hand tied and left for a long maturation period of at least 90 days. It is thanks to this that Gualerzi Coppa has a delicate taste, its balanced consistency, and the typical red and white colors due to the presence of both lean and fatty meats. A unique Italian tradition.
