Primo sale or “first salt” means that this artisan cheese has undergone a certain degree of aging. It also indicates the typical Sicilian pecorino cheese. The term primo sale, mostly used in southern Italy and Sicily, explains its Sicilian origin.
Its a young cheese and has a bright white coloured and milky flavour - added pistachios give it that extra wonderful flavour!
