Colour – Bright red ruby conferred by lean cuts, alternating with white from the pork fat.

Scent - Characteristic and pleasant fragrance of seasoned pork meat. Smoky and spicy noted of pepper.

Taste – Full-bodied and pleasant, with intense and seasoned flavours. Mildly hot and spicy. Savory but not salty.

Texture – Compact and dry.
