This is a certified DOP product proving its quality and authenticity.

Made from pasteurized whole cow milk this cheese is compact, yellow with oval holes. It has an intense flavour with traces of hay and stable.

Serving suggestions: It is usually well accompanied with full-bodied red wines, aromatic honey, fresh fruits (especially apples and pears).

Production method: artisan and industrial

Salting: dry

Ripening: at least 90 days

Fats: 45% M.F

Average size of the wheel/piece: between 2.5 kg - 2.6 kg
