Bottarga

Bottarga, known as yellow gold, is a salty fish derived from a female grey mullet. Enjoyed by many cross the world this unique delicacy is known as one of top ingredients used in an unmistakable regional dish in Sardinia, Italy. Usually grated on top of spaghetti pasta it adds to add its unique salty taste, it is also used in several other preparations like artichokes, asparagus to sliced thinly on scallops and fish fillets.
